Spicy Bean and Feta Baked Eggs
One of my family's favourite spicy dishes is our Spicy Bean & Feta Baked Eggs.
This recipe will serve 4.
Ingredients
- 200g Chorizo (sliced)
- Diced Onion
- 3 Bell Peppers (any colours)
- 200g Feta (diced)
- 1 x Tin of Butter Beans (drained)
- 1 x of Chopped Tomatoes
- 4 x Eggs
- 1 tbsp Olive Oil
Seasonings
- 1 Tsp Chipotle Paste
- 1/2 Tsp Smoked Paprika
- 1/2 Tsp Cumin
- 2 Tsp Cumin
- 3 x Crushed Garlic Cloves
- Salt & Pepper to taste
Method
- Begin by warming your olive oil in your oven-proof pan on a medium heat, I use a shallow cast iron skillet.
- Add diced onion to soften
- Slice the chorizo and peppers.
- Put the crushed garlic and smoked paprika in the pan for 1 min then add the chorizo.
- After a few minutes add the peppers and beans.
- Next add the chipotle paste and tinned tomatoes
- Add the salt and pepper, taste the dish and adjust seasoning as required
- Once the sauce has heated up add the feta and make 4 indents and crack your eggs into these dips.
- Preheat your oven on to 170c
- Once the oven is warm put the skillet for around 5 minutes.
- Serve and you are done!
Optional Serving Idea
We like to serve this with spicy rice and homemade tortilla triangles. The triangles are super easy, sprinkle some olive oil, paprika, salt & pepper over some plain tortillas and cut these into triangles. Put them on a baking tray and pop in the oven with the main dish, the triangles take only a few minutes.
Swap out Options
Lots of these ingredients can be swapped or altered to use up whatever is in your fridge. We've added mushrooms and sweetcorn instead of peppers. Chicken or sausage instead or chorizo. The butter beans can we swapped for any beans such as cannellini or kidney beans.
