The weather this year around the globe has been crazy, I don't remember the last time we had a summer this wet, window and cold! Of course this has meant everything in the garden hasn't quite gone to plan.
The tomato plants have suffered the most and we are dealing with blight so when life gives you green tomatoes it's time to make homegrown Green Tomato Salsa.
Ingredients:
8 cups of Green Tomatoes
3 Onions 🧅
5 Cloves of Garlic (a few of mine were small) 🧄
3-5 chillis of different varieties 🌶️
3 Bell Peppers 🫑
Seasoning:
1/2 cup of lime juice or white vinegar
1/2 cup of coriander finely chopped
2 tsps Cumin
1 TSP Oregano
1 TSP Smoked Paprika
1.5 tsps Salt
1 TSP Black Peppe
Chop the ingredients and roast everything on 200c for 10-20 mins making sure some nice darkened bits have appeared.
